Cheezy Broccoli Rice Casserole

Shown without bread crumbs on top
1 cup of jasmine rice (DRY), rinsed well then cooked in Instant Pot with 1 1/4 cups water for 4 minutes with natural release
1 recipe of my Best Veggie Cheeze Sauce
1 large head of broccoli, cooked in a steamer basket in the Instant Pot for 1 minute with quick release
Salt and black pepper to taste

Let the rice cool just a bit in a large bowl. Separate grains with fork. Add cheeze sauce and broccoli. Stir to combine well. Taste and add more salt or pepper if needed. Top with Jill Ann McKeever's fabulous bread crumbs (recipe below), if you desire, and bake at 350 degrees until warmed through.

Jill McKeever's Bread Crumb Recipe:
2 slices whole wheat bread (I used Trader Joe's Sprouted Whole Grain Bread)
1/8 t salt
1/8 t pepper
1 t dried parsley
1/2 t. onion granules
1 t. nutritional yeast

Process into crumbs.
