Warm Sweet Potato-Avocado Kale Salad

1 large sweet potato
1 large bunch of kale, chopped finely
1 small avocado or 1/2 large
Juice of a lemon
salt and pepper to taste

Bake your sweet potato (and leave the skin on!) at 400 degrees for about 1 hour. Chop the potato into chunks. Let cool for about 5 minutes.
In a large bowl, combine all ingredients. Massage the kale with the other ingredients.

Makes 4 servings
