Mini Stuffed Seitan Roasts with Portobello Mushroom Gravy

I found this recipe on Cooking with Plants and thought it sounded fabulous. I made a few changes (used chopped shallots instead of green onions and added a few additional herbs like rosemary and marjoram), but it is essentially the same. It is all cooked in one pan, which made it simplistic. Even the kids liked it!
