Whole-Wheat Bread Crumbs

When a recipe calls for bread crumbs, you can make your own! I use Ezekiel bread (which I keep frozen), so I just toast 6 slices (careful not to burn them!) until they are completely dried out. Then, I grind them in the food processor and store them in a freezer baggie for future use. Whenever I need bread crumbs, I have them ready to go! Great to use for eggplant parmesan, Eggplant "Fries" or whatever! I am using mine to make Tofu Fish Filets on Tuesday.
