Low-Fat Beet Hummus

1 small roasted beet, peeled and quartered
4 cloves of roasted garlic
1 15 oz. can organic garbanzo beans, drain but reserve the liquid
juice of one large lemon
1/4 t. sea salt
1 T. tahini
2 t. raw organic agave nectar

Blend all ingredients in a high-speed blender, adding reserved liquid from garbanzo beans until you reach your desired consistency (very smooth!).
Served with baked pita chips.
