Strawberry-Vanilla Custard [refined sugar-free, dairy-free, gluten-free, vegan]

1 1/2 cups fresh strawberries
1 1/2 cups previously roasted and chilled Hannah or Japanese (white) sweet potato
3-4 Medjool dates, pitted
2 t vanilla extract
1/4 cup plant-based milk

Blend all ingredients until very smooth and chill before serving.
