Roasted Garlic Oil-Free Dairy-Free Corn Butter

This very simple recipe is my spin on Mary McDougall's original Corn "Butter" recipe. Delicious on bread, pasta, potatoes, or any other food you'd normally spread butter on! And, you don't have to be a corn lover!

2 cans Simple Truth Organic salt-free CANNED corn, drained well
4-5 cloves of roasted garlic (roast in closed piece of foil with a few dashes of water at 400 degrees for about 25 minutes)
1/2 T fresh lemon juice
3/4 t salt

Blend until super creamy in a high-speed blender.
Place mixture in a small sauce pan and cook over low heat, whisking often, until thickened.
Serve warm or chilled. Keep refrigerated.
