Garlicky Kale Salad

We served this at our four-year "Plantiversary" party, and everyone really enjoyed it. It has a unique flavor with a bit of a sour yet cheezy and garlicky twang. People who love lemon or vinegar-based dressings will love this salad!

NOTE: Make sure to dry your kale WELL before tossing in the dressing. You don't want to water it down. Also, I usually only use 1/2 the amount of dressing for one head of kale, and it's still delicious!

Serves 2-3

1 bunch of kale, washed, dried WELL, and ripped into small pieces
2 T lemon juice
2 T tahini
2 T low-sodium soy sauce or coconut aminos (leave out if doing SOS-free)
2 T apple cider vinegar
4 T nutritional yeast
2 cloves of garlic
Toasted black sesame seeds for garnish, optional

Blend all ingredients (except kale!) in a blender until smooth. Toss into bowl of kale AT LEAST one hour before serving and chill in the fridge. Garnish with toasted sesame seeds before serving.
