Egg Nog French Toast

8 slices of  whole grain bread
1 cup unsweetened cashew milk
1 T walnuts
1 T ground flax
1/2 t cinnamon
1/8-1/4 t nutmeg

Mix cashew milk,  walnuts,  flax,  cinnamon, and nutmeg in blender until smooth. Pour into a pie plate and let sit for 5 minutes. Dip bread into mixture and cook in nonstick skillet over medium heat until lightly browned and cooked through. Flip several times until the bread dries out some. Serve with real maple syrup or fresh fruit,  like bananas. Sprinkle with more nutmeg or a bit of coconut sugar.
