Oil-Free (but DREAMY!) Caesar Salad Dressing

Early on in our plant-based journey, before we stopped using oil in our cooking, we used to make a fabulous Caesar salad dressing. Unfortunately, it's not an easy recipe to convert. So, I was thrilled when I saw that Dreena Burton had created a "Dreamy" Caesar dressing without any oil (which was highlighted on the Forks Over Knives website). Looking over the recipe, I decided that I would need to double it. However, I decided to reduce the nuts by half and see if the dressing was still delicious. IT WAS! Whenever possible, modify recipes. A lot of times, you can reduce the calorie-dense ingredients and still get the same (or better!) results!

Here is the link to the recipe. Just DOUBLE the recipe, but ONLY USE 1/3 cup raw cashews (total!) for the whole double recipe! It is divine! Try this dressing with my Oil-Free Croutons on fresh, organic Romaine lettuce!
