Cook Once, Eat Twice

One way to make living a whole foods plant-based lifestyle do-able on the weekdays is to cook ONCE for two meals. Most recipes serve about four people, so this works particularly well when you're only cooking for two. When you are cooking for a larger family, you'd have to double the recipe.

Choose recipes that lend themselves well to reheating. For example, this Tex-Mex Tofu Scramble is a winner for at least two nights. Also, bake potatoes with chili, enchiladas, lasagna, any soup, any stew...these all make perfect two-nighters! You can always add fresh steamed veggies on the side to make the meal a bit different from the night before. Just don't wear yourself out cooking for days. It's not necessary!
