Oven-Baked Veggie Fritters

4 zucchini, shredded
4 carrots, shredded
1 1/3 cup frozen corn, defrosted and drained
3/4 cup oat flour
1/4 cup old-fashioned oats
4 teaspoons garlic powder
4 teaspoons onion powder
3/4-1 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon smoked paprika

Preheat oven to 400 degrees F.
In a food processor, shred the zucchini and carrots with the larger shredding disc.
Place shredded veggies in a strainer and press out as much liquid as you can.
In a small bowl, mix together the oats, oat flour, and seasonings.
Mix all of the ingredients together in a large bowl and refrigerate for 30 minutes.
Press into small patties (no more than 3" wide) and place on parchment paper-lined baking sheets.
Bake for 30 minutes, then carefully flip them over.
Bake for another 20-30 minutes until crispy. If the fritters are getting too dark, turn down the oven to 375 degrees until finished.
